Self Crusting Zuchinni Quiche

2 large zuchinnis grated
1 cup grated edam cheese
¼ cup olive oil
2 rashers of trimmed bacon
1 tomato chopped
handful of mushrooms chopped
1 onion chopped
1 cup self raising flour
3 eggs beaten
salt & pepper

Combine all the ingredients, pour into a pie dish and bake at 180C for 40 mins.

Serves 6 – 4.5pts per slice.

Great with a salad on its own, or with a piece of bbq meat like steak or a chop.
